Sure they can:

"iTunes v7.3 is installing, please wait while we enhance your files"  

Of course, I really don't think they will, but it is possible. The real
issue with ALAC is not DRM however, it's the relative lack of support
for it in non-Apple products and the non-openness of the format. The
latter issue is partly to blame for the former, and becomes a
particular problem if/when Apple decide to drop the format and move to
something else. A lossless archive is only useful if you can
play/convert it at will. But is it really likely to be a concern?
Probably not.
