I have a setup very similar to what the original poster wants. I'm using ClarkConnect on a headless server. This box only runs slimserver, and uses Samba to share the music folder with the Windows Network.
I never have to touch this box, everything is done from my Windows PC. I just map the shared music folder to a drive letter on my Windows PC, and it shows up as the X: drive. New music can be ripped directly to the X: drive. I administer slimserver via the web interface on my PC. ClarkConnect is also administered the same way, an easy web interface from my PC. So, if you can get ClarkConnect installed and set up a Samba share, you're basically done.
