I could argue that square waves are very useful in designing audio gear, precisely because the are hard to amplify and give me instant insite into what an amp is doing!
Like any test signal, you do need to recognize it's limitations though. One of those, as you're pointing out, is that a 20KHz square wave is useless when testing sampled audio systems using the 44.1 or 48 KHz sampling rates. A 20KHz square wave is still useful in understanding the behaviour of an analog circuit when pushed beyond it's normal operating conditions.
