There are lots of really good programs which will help set up a VPN
(like TightVNC). The difficulty will be in getting backup software
located on the local computer to "see" the host for backup as you've
already identified, but I understand it can be done.

For a quick and easy (but not free) solution - there are lots of
programs that will do it for you.  'LogMeIn Pro' (http://logmein.com)
has a file manager which will synchronise and replicate folders between
host and local computer (like using SyncToy, but between two computers)
and it's secure and easy to use.  You have to subscribe annually for
the service though.  I have, because I travel a lot for work and need
to access my home computers remotely quite a lot.  Not sure it would be
worth it as a backup strategy alone.  MS are also running a beta program
that does the same thing - not sure how good it is though:

For that I use Acronis with an automatic weekly backup to an external
drive which is mounted on my network (or if I add a lot of new music,
as soon as I'm done), and a monthly/6wkly backup which gets taken off
site.  Both backups are "incremental" so don't take too long.  If the
drive isn't there, I get messages that a scheduled task has failed
every time I start up my laptop, which usually kicks me into doing it. 


There's plainly redundancy in that strategy, but I don't add so much
music over 4-6 weeks that it would be a disaster to lose that much.
