I would guess your Pioneer doesn't pass analogue input straight through to the amplification stage, and will probably digitise the inputs, then convert back to analogue on the outputs. Most AV amps do this as far as i'm aware. So you are usually far better using a digital connection for AV amps.
As for whether that should be optical or coax, I really couldn't say. I certainally wouldn't be able to tell if there was a difference or not.
