Wow...just answered my own question.  Bind mounts are pretty cool. 
Since I leave my ro/rw partitions mounted in my aufs dir, all I needed 
to do was:

mount -o bind /.rw/swapfile /swapfile
swapon /swapfile

and it worked fine.  Now I'm embarrassed at how simple it was. ;-)
