Options are fairly limited within the criteria of mid-week ops and at the
same time "touristy", especially if XC is high on the list of goals as
opposed to simply "going gliding in Australia"
Consider:
GCV Benalla - still a few hrs from Melbourne, but good XC options and
on-site accommodation in huts. Think they still fly mid-week, but it's
been a few years since I was there and there have been some changes.
Not sure if other clubs near to Melbourne fly mid-week - check the club
listing on the GFA web site.
Caboolture - close to Brisbane, but probably limited XC opportunity
although there are some Dimonas there to can get you into the spectacular
scenery of the Glasshouse Mountains.
ASC at Gawler - approx 1 hr from Adelaide. Has good XC conditions and I
believe also on-site accomodation. Not sure about mid-week operations.
Southern Cross at Camden (www.gliding.com.au) - < 1 hr from Sydney, flys
mid-week (Mon - Wed) and has a bunkhouse, limited XC opportunities but
plenty of good social flying, all located right on the doorstep of
beautiful Sydney which gives LOTS of touristy options.
Best to check club web sites for more details, using GFA site as a jump-off
point.
Also kind of difficult to believe that you plan a trip from UK to AUS
without first considering where you want to go when you get here ... unless
you're Captain Cook !

Clive has unfortunately given us only 3 days notice on arrival in Aus -
