Hi Tom, Have you looked through Condor's forums? The BGA recently launched a Condor based sim. There are some mad keen enthusiasts, spending more time simming and building sims, when they could (in my opinion) just be doing the real thing, though weather and costs may be a factor.
An opensource version of TrackIR that just requires a few cap mounted LED's and a generic webcam will get you (apparently very good) head tracking, so you can turn your head and have a look at the wingtip etc. (find the apps name and then youtube it.) Then there are interfaces, for turning an lcd into an operating instrument panel (just add suitable looking hard overlay for a real look) I'm sure in some aspects you would like to design and create your own systems, but there are a fair few wheels out there that have already been invented. If only I had more time...
