You can only medically self declare for solo pilot status, anything else (A.E.I. upwards) need to be medically certified :
From 1 January 2013 pilots holding a GFA Instructor authorisation (i.e. AEI, Level 1, Level 2 and Level 3) must be medically examined by a legally qualified medical practitioner and found fit to fly in accordance with Appendix 2 of the GFA Operational Regulations; or be a holder of a current CASA Class 1 or 2 Medical Certificate.
