I'm not trying to be difficult, and I admit to being something of a dinosaur, but
can you point me to a style guide that endorses this? You picked a book at random,
and it used sentence style capitalization? Amazing. I've never seen one. Here are some
books I grabbed at random, and all use traditional capitalization of titles:

A History of Christianity by Paul Johnson
The Fabric of the Cosmos by Brian Green
Storey's Guide to Raising Chickens by Gail Damerow
Spanish for Gringos by William C. Harvey
Mendel in the Kitchen by Nina Fedoroff
Puerto Rican Cookery by Carmen Aboy Valldejuli
The Sopranos Family Cookbook by Allen Ricker
Canceled Flight (101 Tried and True Pigeon Killin' Methods) by A. V. Jones
all O'reilly books
all Microsoft books
every technical book I have
and, of course, The Chicago Manual of Style.

In fact, I can't find a single book that uses sentence style capitalization.

I am also a professional technical editor, which only means I get paid for
what I do.

There is a clear benefit to providing users with what they expect in a document.
If readers believe the author didn't take the time to get the titles right, what does
that say for the rest of the document? I simply don't agree with the "easier to
get right" argument.

Sentence style capitalization is perfectly legitimate and it is not improper. We do have two professional technical editors here. Sentence style capitalization is easier to get right.

I understand that sentence style capitalization is simple, but why dumb down the writing process?

Why make it complicated unless there's a good benefit.

I have. I just got up and grabbed a book at random. The first book I picked had sentence style capitalization.
