Thank you for all the copyediting there! From here, where do I proceed in the workflow of this document? For example, I notice that the bulleted and numbered list example that I had provided has not maintained its formatting in the copyedited version?

I think that I should merge in your changes, set up the bullet list example (not sure what went wrong there) and then follow these instructions:
http://oooauthors.org/en/authors/userguide2/resources/howto_update

Is that correct?

Thanks once again for the corrections.

Just accept or reject all or any of the edits before writing your next draft. But use the new file for its new style definitions instead of the original file. [Eventually (probably when hell freezes over), I'll put together a new template for general OOoAuthors use.] Open the copyedited file and do a Save as to create a new file right away. Rename the file with a new date.

You can experiment with appropriate paragraph styles for the numbered list your file is based upon. You may have to set the style parameters to something you like until a new template is available with better styles. Our current list styles are based on manual overrides done via the toolbar (I suspect) instead of using appropriate list and paragraph styles.

Just create your own either manually or use your own styles for now. There have been essentially only two editors who have done the final editing the past two years, and we just did some things that aren't formally documented--but work OK, mostly.
