That demo is of a shockwave/director game running on a server (presumably
with hardware T&L), being streamed as video to the clients (browser, air,
and iphone).  Doesn't seem to have much Flash involved.

You could probably come up with something nearly comparable in Flash if you
were careful enough with your optimization and environment/model creation. I
would skip the physics, as has already been suggested, since you will
probably need every cycle you can get for rendering.
