Probably in a similar way as \begin{verbatim} ... \end{verbatim} or \verb do it. Otherwise I would say one can restrict chunk names to ordinary LaTeX text similar to what noweb provides. Note one can have

<<$e^{i\pi}=-1$>>=
 ...
@

as a chunk in noweb.
