Hmm, I guess my question should have been phrased differently.  In the same 
time period, there are many with the surname Santos but; only a few who go by 
dos Santos.  Different family lines?  No other surnames are included on any of 
the dos Santos that I’ve seen but; Santos sometimes stands alone and sometimes 
is accompanied by other surnames.

Santos is the surname. "dos" the prefix.

Literally: 
dos= of the (plural) 
Santos= Saints.
