Could you provide more details about your workflow? For example, what do you mean with your reference to "the i button"?
If you have a text file open in BBEdit, make changes to that file, and then save it, then your changes are preserved. As for renaming photos, rather than do this in BBEdit, try selecting them in the Finder, and then calling up the contextual menu (AKA right click) and select "Rename …". Proceed as necessary.
