I agree with you on being flexible. I, too, have made a go at using predominantly veg. wastes, mostly leaf compost. It was most successfull when vermicomposted first. If not, was not as good as I had hoped right away. but... to echo Woody's statement, the GOLD shit is the cow. When I worked at Rodale Institute, there was a compost trial with some seven different composts, including the Lubke "Controlled Microbial Compost", and against these were poised chemAg and dairy manure slurry. The best compost was a steer manure and leaf mix, but the best thing overall every year was just dairy manure. The stalks and ears of the corn were just massive - like the cows neck. Also, when I had no cow poop, extra additions of BD500 seemed to fill the void well...as Steiner said, with the horn manure you won't need so much actual manure.
