Ian, At a minimum you will also need to install the 'gui/gtk' addon. 'install' jpkg 'gui/gtk'
The other bit that you need are the Gtk+ binaries. I'm not sure if they are included by default on Mac? If so then you should be golden. If not you'll need to get them from somewhere. http://gtk-osx.sourceforge.net/ looks promising.
