Updating the podcasts will change the itunes library, which triggers the SlimServer rescan. That's what's expected. You might want to change your iTunes rescan interval or set up a scheduled rescan.
Anyway, it does seem to be a trend that the new iTunes parser in 6.2 affects Mac users more than Windows users.
