Dean, I'm kinda going through the same thing, although not a HANG! I'm 'experimenting' with v7 on my Mac G5 (OS 10.4.11) yet run 6.5.5 on my Mac MINI (OS 10.4.11) as my main host. This gives me the opportunity to play with both versions and help find things I do and don't prefer... but the upgrade thing happens with each server switch.
I'd guess there's no way around this at present, yes? BTW, I LOVE the way you have used SqueezeNetwork to 'integrate' all associated players on my system with v7.
