I rip with EAC and don't have any album artist or composer tags.  I REMOVE 
composer tags that are incorrectly put in my some meta data engines, eg. if I

I only use composer tags for classical music - not pop music.  It doesn't seem 
right to me to put a mix of "The Beatles", "Lennon/McCartney", "John Lennon", 
Paul McCartney" Lennon & McCartney", etc in composer fields.  Metadata sources, 
as used by Amazon and iTunes, and all other apps is poor/inconsistent.

For cover songs, I add a custom ORIGINAL ARTIST tag, and use Custom Scan to 
read it and Custom Browse to navigate between original artist and performing 
artists.

I don't think that bears any relation to quality of tags.  A new rip/legal 
download could just as easily have worse tag quality or no tags at all.
