Try saving. If that works, you should be guaranteed to have no bibtex errors.

Ingrid's original post indicates she's already tried that, so I don't
understand what's going on here. I think we need a minimal (single entry)
.bib file that shows the problem.

In addition, after correcting an error, saving, reopening the error window,
and double-clicking on the warning item, the "Edit Source" window that
appears displays the original un-fixed text; i.e., it displays the double quotes rather than the paired single quotes that I have just inserted. So it seems that somehow the error-checking is not actually looking at the current
saved version of the file.

Instead of fixing the error in the plain text editing window, you need to edit it in BibDesk's editor after figuring out the citekey of the offending item. So try this:

1) open in BibDesk
2) double-click the warning line in the error panel
3) see the citekey is Whitta1999Replicas-Fakes-Art
4) close the text editing window
5) find that entry in BibDesk's list
6) double-click it, switch to the "Abstract" tab and fix the problem
7) save, close, and reopen

You can do this all in the plain text editing view, but you need to use the "Reopen" button to see the changes, and it will make a copy of your file.
