I had a problem with evolution when I made the switch.  I think the main 
problem was that evolution kept all of its cache data from the imap server 
and for some reason didn't like the switch from . to / for the delimiter.  I 
removed all of the cache and it worked fine.  This may be completely 
unrelated to your issues that you had (I assume you just needed to 
resubscribe to the imap folders you had previously) but nonetheless you have 
fixed the problem :)

It is very simple.  In fact, I'm surprised this problem didn't come up with 
courier-imap because it's not a limitation of the imap server (well, in a 
sense, it is, but both have this limitation unless you're using IMAPdir with 
binc) it's a limitation of the store format, there's really no way to add 
root level IMAP folders.

Anyways, here's a quick rundown:

Tools -> account settings
expand your email account by clicking on the plus sign to the left of it
select "copies and folders"
You'll want to select "other" for the different locations and then choose a 
place in your imap account you'd like to store them.

I'll draw something up tomorrow and put it up on the wiki for all to see and 
enjoy.
