I find that the following works when adding a recipient to the addressbook
for outlook 2010 and this will also work for 2007 as well.

Once the email is open hold the alt key down and tap the number one under
the function keys twice quickly and then tap your left arrow key once.
After pressing the left arrow key, you will land in the from field focused
on the users name or email address.
Press shift f10 or your applications key and down arrow to add to outlook
contacts and press enter.
The contacts form will appear, feel free to tab through the form to add any
additional information or you may press alt S to save it.

Instructions for adding email address to outlook address book.

Yes No Cancel
You're on the default button which is yes, Just press enter, The new entry
is posted in your address book in outlook.

     I don't remember every detail about adding signatures. However, if you
press alt N you can then tab to signatures. Press enter, and I believe you
down arrow to the line that says signatures. Next, tab through the available
options. I don't remember how it goes past this point.
