If you're talking modern  headphones of the computer variety, the answer is
pretty much no.
they're very low impedance output, like 32 ohms or less thus would not
produce very much voltage and are probably very 
inefficient at transforming sound into voltage besides that.

mikes for computer sound cards are cheap as dirt unless you really want
very high quality for music recording etc.

they are all condensor mikes and require a bias D.C. voltage on one
pin of the 3 circuit stereo plug which voltage is
supplied from the standard sound card mike input.
