What ever you decide to put on the floor, Make sure you don’t choose carpet.
I had carpet in a kitchen and I ripped it out and put down lanolium.
I have seen a lot of kitchens with lanolium and It seems to whare very well
and is easy to clean up. Also with the ecseption of where you would have to
join 2 pieces or along the wall and base board it is impervious to water for
the most part.
One last warning.
If you go with ceramic or some other very hard surface correll dishes
dropped on these floors make quite an impressive crash and the dish turns
almost into powder. I have seen this happen.
And I can asure you that you will be finding the remains of the dish for
weeks

If engineered flooring gets wet for even a fairly short time it will often
swell along the edges of each piece. The laminations can separate or one or
more layers may swell a little. Water wiped up quickly as for example when
washing floors isn't an issue and some resist it better than others.

Just a caution.

I have seen it used in kitchens but never in bathrooms but I don't know if
that is some sort of rule.

I suppose cork laminated floors are a type of engineered floor and they
certainly are used in bathrooms.
