Ice makers in a normal refrigerator has a certain amount of water enter a 
tray and all is frozen.  The freezing process starts on the out side and moves 
in.  As water and impurities freeze other things change as the release of 
oxygen and trapped foreign material is suspended and frozen in the ice.  If set 
very cold the ice will be 95 percent ice give or take and 5 per cent water.
      In ice makers that produce clear ice, the water is flowing all the time 
and only pure water freezes, no bubbles or other impurities are suspended in it 
since it is flowing.  At the end of the freezing cycle the water that is not 
frozen along with un-wanted items is flushed from the system.  A very good 
clear drink ice is almost 89 per cent ice and 11 per cent water.
