I've done some carving, but haven't had a lot of time to play with it.  But 
since he has been able to see, those images won't ever be lost to him. 
He'll be able to carve from memory.  Dimension may need adjusting, but it's 
definitely possible to carve and be blind.

As for making a living at it, there's no way to know.  So much depends on 
the things you don't know.  How good is he?  How much will he enjoy it after 
not being able to see?  Is there a market for what he enjoys carving?
