When you create an email account, right after the authentication option, the
pop port is presented.  If you need to change this, just type over the
default.  
Same holds true for the smtp port.

With the email server I use I need a non-standard smtp port and just enter
it over the default and it works very well.

That's all you have to do.  Of course, you do need to know the port number
which you should be able to get from your provider.
