225 grams dried fruit -- (8 oz/2 cups) (sultanas* and candied
peel)
1 tsp salt
1 tsp bread (baking) soda -- (1-1/4 US tsp)
225 ml boiling water -- (8 oz/1 cup)
225 grams white (all-purpose) flour -- (8 oz/2 cups)
125 grams brown sugar -- (4 oz/1/2 cup) dark or medium brown
1 tsp mixed spice -- (l-1/4 US tsp) or cinnamon
Mix the fruit, salt and bread/baking soda in a bowl. Pour the boiling water
over this. Leave for 10 minutes to soften the fruit. Add the flour, sugar and
spice.
Mix everything to a dropping consistency. Put it in a greased 450 g/1 Ib loaf
tin. Bake at 190�C/375�F/gas 4 for approximately 3/4 hour. Cool the brack
in the tin for a while before turning onto a wire rack.
Description:
"This is a simple version of the more complicated and traditional barm brack.
A similar brack can be made by soaking the dried fruit in cold tea overnight
before mixing in the flour."
