Popovers
2 eggs
1 cup milk
1 Tbsp oil
1 cup all-purpose flour
1/4 tsp salt
Preheat oven to 400F. Grease the bottom and sides of six 6-ounce
custard cups or the cups of a popover pan. If using custard cups,
place the cups in 15x10x1-inch baking pan. Set aside.
Combine eggs, milk, and oil in a medium mixing bowl. Use a whisk and
beat until well combined. Add flour and salt, beat until smooth.
Fill the prepared cups half full with batter. Bake about 40 minutes
or until done. Remove popovers from cups and serve immediately.

Garlic and Chive Popovers:
Prepare Popovers as above, except add 1 tablespoon snipped
chives and 1/8 teaspoon garlic powder to the batter. You may use 1
tablespoon parsley in place of chives.
