My advice would be not to bother.
Yes, it would be nice to have a 3 digit readout.

But, when PIDs first became available for the Brewtus II, some people
did a conversion and added a PID instead of the non-pid temperature
controller that came with the Brewtus.
They reported that they were happy with the change, but that it did
not really make any difference in the quality of the espresso shots
that they pulled.

It sounds like you would do more to get better espresso shots by
finding a quality, artisinal, roaster who could ship beans to you.

You can buy the beans in large quantity and freeze them.
Freezing in small freezer jars and then defrosting before opening the
jar seems to do a good job of preserving freshness in quality beans.
