Great points David and Tegespresso. To David's point, there is a bevel on the gasket's inner and outer diameters on one side only--this goes up, so that the flare on the screen fits into the bevel on the ID, and the OD bevel fits into the "corner" in the group.
To Tegespresso's point, the thickness question relates to the ears of the PF, and the height of the "lip" on the PF basket--the combination of these two variables is what dictates a certain thickness. In my case, I use the Rancilio bottomless PF, with a VST basket. This combination results in almost identical thickness as the stock PF and blind disc or double basket, so the 8.5 has continued to work well. However, with the 8 mm accidental purchase, my PF locks in at about 5 instead of 6 o'clock, and doesn't make a bit of difference--other than aesthetics if you are cut in that direction. The basket is a symmetrical circle, so no change in coffee quality. The one thing I'd say is relevant is if the PF barely makes contact with the group before stopping/locking; for example, 7 o' clock. This can result in an unsafe condition because there's not enough connection between the group and the PF ears, and it makes it easier to bump the PF handle and have the PF come off when under pressure (with resulting blast of hot water and grinds all over you). The ears are fully engaged at about 6:30, and past fully engaged at 6 or beyond (5, 4, etc.) Having the PF go "too far", say 4 o'clock, doesn't matter, because there is not a second set of notches in the group that would allow the PF to disengage in that case. Hope some of this helps. It's a cheap part; if you buy the wrong one you can always change thickness. 8.5 is going to be your best generic bet, and even better, put calipers on your old one and you'll know exactly what it was. The edges should still be true to its original thickness (center will be dented). When in doubt, I'd go slightly thinner than thicker, for the reason noted in the previous paragraph--your PF will then go "too far" instead of "not far enough", and will be safe if not aesthetically perfect. You can also compare your current configuration of PF and basket to the original PF and basket and buy accordingly--if your config is thicker than original, get the 8. If thinner than original, get the 9.
