On issue 1: have you checked the pressure gauge is ok?  The tech could check with a pressure testing portafilter ( gauge built in).

Also I guess you have monitored the flow from the bypass valve (opv) while brewing with a blind basket?  Adjusting the opv is what sets the max brew pressure.  On most brewtus with onboard tank the overpressure flow goes back into the tank.

I sadly live in a small apartment, where I'd rather not plumb in the machine until I move later in the year, and there is simply no space for a 5 gallon bottle and flojet. A few questions:
A) What is the overall process to convert from plumbed in to reservoir? Happy to refer to the attached Brewtus compendium PDF for easy referencing
B) What parts are needed and how long/ambitious would this project be for a budding but not experienced DIY guy?
C) What type of reservoir could fit and where could I buy it from? 
D) Bonus: Would this process be reversible? If I move to a larger apartment and if I decide to plumb-in.
