I had this same problem on a few things. It is a syslogd problem. I believe it has to do with how it gets started / restarted. I usually have to reboot the machine and all will be fine. I know if I'm logged in and I restart the syslogd I will get logging to the console. Wish I had more time to figure out a better way to fix it :)
