Yes, finding women players is not easy.

I find the situation similar to University courses
such as Engineering. 

When many girls hear about Ultimate, they think it
does not suit them, but if they are explained well and
they are introduced to the sport in the right way,
they like it and they keep playing with enthusiasm.

Many Engineering programms attract mostly men, but I
know of some notable exceptiosn where the men/women
ratio is 50/50 or even more women than men.

The Universities that achieved this have done so by
actively recruiting and supporting women. I think the
same applies to Ultimate.

Whereas many new male players just show up because
they have seen people playing in the park or because
they have a friend that plays, women need to be
scouted more actively.

I think that Iceni and Bliss are doing a good job in
attracting more women to the sport, but perhaps mixed
teams could do more.

I have tried to ask around: gym, random people jogging
in the park, at work and I have had some positive
responses.

Some organisation also works: posters, leaflets,
business cards, a demo DVD or website, etc.

Perhaps UKUA could help out on some of the above.

It takes some effort and you can't be shy. Many did
not come to practice, but, hey, I have collected quite
a few phone numbers... :-)
