If I wasn't confident in my ability to do something more difficult, I'd skip 
the scotch bottle and the Swiss cheese fondant.  I'd put some icing between 
my two layers, cut a wedge of cake out, and then decorate the total outside 
of the cake with red icing to look like the wax on a cheese ball.  I'd color 
the inside of the missing part with an orange-ish frosting to look like 
cheddar.  You could decorate the slice you took out, the same way and put it 
on a small plate next to the main cake.  If you still think people won't 
know what it is, you can write "cheddar" on the top of the cake.

Most people wouldn't even try what you want to do, so they'll be very 
impressed with your efforts even if you aren't a Martha Stewart (not that I 
am either).  I'd keep the mouse and sign idea too.
