Dump Cake
1 box white or yellow cake mix (see note)
1 can (20 ounce) crushed pineapples
1 large can peach chunks (see note)
1/4 cup Cream Sherry wine
1/2 cup (1 stick) unsalted butter, melted
1 cup chopped pecans or walnuts
Non-stick cooking spray Preheat oven to 350 degrees. Spray a 13"x 9"x 2"
glass baking dish with the spray. Dump the pineapples, peaches, and
sherry into to baking dish, stir to mix them spread fruit evenly over
dish. Top fruit with dry cake mix, spreading evenly but do not mix into
fruit. Top cake mix evenly with nuts.
Then sprinkle butter over top of nuts and cake mix. Bake in preheated
oven 45 minutes or until very light brown on top. (my oven is old and
temperature is off so I set it at 350 degrees and check at 45 minutes,
but it may take longer in your oven.) Serve as is or topped with ice
cream or whipped cream.
Note: For cake mix: I use what ever I have on hand, with or without
pudding in mix. Butter cake mix. Chocolate with pears works well. You
can use any type fruit. I have used canned cherries, blueberries,
strawberries, pears, mixed fruit, all types of fruit pie filling. When I
use pie filling I
add a little more wine to thin juice.
