Italian Stewed Tomato Spice Cake

About This Recipe
"A very dense cake that has a distinct tomato flavour and the addition
of spices gives it a good accent that adds to the taste of this
vegetable cake"
Ingredients
o 2 cups all-purpose flour
o 1 1/2 teaspoons baking powder
o 1/4 teaspoon salt
o 1 teaspoon cinnamon
o 1/2 teaspoon ginger
o 1 cup Italian stewed tomatoes
o 2 eggs
o 1/2 cup grated carrots
o 1 cup granulated sugar
Directions
1. Preheat oven to 350 degrees fahrenheit
2. Grease and flour an 8" square cake pan
3. Assemble dry ingredients in a large mixing bowl
4. Add stewed tomatoes and grated carrots to dry ingredients and mix
with an electric mixer on medium speed for 3 to 4 minutes.
5. Add eggs to mixture one at a time beating well after each addition.
6. Stir in granulated sugar and mix until just combined
7. Pour into greased and floured cake pan and bake for 35 to 40 minutes
8. If desired ice cake when cooled.
