Amaretti Amore Torte

Makes: 8 servings

Notes: This is a light, flourless chocolate cake with a souffle-like
texture. Amaretti (Italian macaroons) and bittersweet chocolate are
an ideal match.

Ingredients:
8 ounces bittersweet chocolate, broken into pieces
8 ounces amaretti cookies
3/4 cup sugar
6 large eggs, separated
1/8 teaspoon cream of tartar

Directions:
1. Preheat oven to 350 degrees. Butter a 9-inch springform pan.
Combine chocolate, amaretti and sugar in food processor. Process
until ingredients are finely chopped and mixture appears grainy.

2. Using electric mixer, beat yolk on high speed until thick and pale
yellow, about 3 minutes. Fold in chocolate mixture. (Mixture will be
thick.)

3. Beat egg whites and cream of tartar until stiff peaks form. Fold
whites into yolk mixture, one-third at a time. Pour batter into cake
pan. Bake about 45 minutes or until top is golden and tester inserted
into center comes out clean. Cool on rack.

4. Remove from cake pan. Serve with lightly sweetened whipped cream if desired.
