I have only had Canada Goose once where I enjoyed it.  Even then all you eat
are the breasts.  Remove the breasts let marinate over night (I wish I
remember the marinate recipe) slice the breast almost through and stuff
(again my memory fails I think it was a mushroom cheese thingy.)  Wrap the
breast in bacon and roast in oven.  It was very tasty and the best use of
this over populated bird I have seen to date.

I was told of a good way of cooking a Canada Goose yesterday.

Take one Canada Goose, clean out the innards and insert one standard 
size house brick. Immerse in boiling water for 4 hours and then roast 
for 3 hours. Remove the brick, discard the Canada Goose and eat the brick.
