Huh? I've heard several answers over the years. My favorite theory is
that these were "bootleg bacon." In this version, Gadarene is close to Gentile
territory, and some not-terribly-observant Jewish entrepreneurs realized
they could make a lot of money by toeing the letter of the law by raising
pigs on their land to sell to the Gentiles.
I'm sure there's other explanation, but I wanted to give you one to chew
on. Sometimes the smartest (and most devout!) people are the worst at coming
up with obvious answers. :-P
