Looks like you can have some functionality with a G3:

But I think that generally speaking, you need to be able to run OS X
10.2.6 or later on your machine for starters. Garageband requires a G4
or faster to use the software instruments, as well. So that might limit
the functionality of it.
On my dual G4, it does pretty well, but can lag a little at some points.
