mouth's on freaking fire!
I used a whole bulb and a half of lightly roasted (30 min at 300F in a
covered crock, starting from a cold oven) garlic to about four cups of
garbanzos and the rest, but it was too understated, and what's Hummus
without garlic, right? So I peel a couple of large cloves from a fresh
bulb, but it turns out to be three rather than two and I'm like, "Why not?",
so I crush and whirl it all about.
At first it's "hey, just right!" but after a little while it occurs to me
that this is a new batch of really young garlic -- delayed nuclear freaking
reaction young garlic -- so it starts to "grow" and I feel like I've been
maced.
I'm combining this batch with a second batch tomorrow that has no garlic in
it so I can balance things out. From now on, it's roasted garlic only, and
just lots of it. Maybe four whole bulbs to four cups of garbanzo beans. At
least that way it won't tear my head off.
Does anyone want a copy of this recipe once I get down pat (and reduce its
lethality)?
