In New Mexico you do not have to have any reason at all, except that it cannot be a prohibited reason, ie harassment, discrimination etc. You do not have to have the paycheck ready.
It's probably worth a Google search on the laws in New York. Or check it out in Findlaw. Side comment, it would probably make the whole thing cleaner and neater if you do have the check ready and you have her clean out her desk or whatever right then and there.
