Windows Media Player. I really love it - and it's scriptable so I can automate the generation of relative playlists for my older handheld. It lets you set all of that stuff. Although I'm not sure if album art and lyrics are standardized meta-data or specific to the player: I think if you add lyrics and album art in WMP it won't transfer to iTunes and vice versa.
