The weight loss should be pointed out: that and potential dehydration are
probably the worst problems (assuming that she is just being stubborn and
doesn't have a casual medical problem).

But she has to be eating _something_ tiny sips of propel won't sustain
anybody for 6 weeks.  So she's getting something someplace (maybe sneaking
it).

Make sure there's not an enabler around there (grandma seems a likely
choice).  Somebody that's worried about the child and slips them candy or
something "because it's the only thing they'll eat".  Especially if they've
made it a "little secret" from mommy - kids eat that shit up.

It may have started as a power play due to the engagement... but with all
the attention it got it may have very well transitioned into a
self-sustaining thing.  You may have to force yourself to try being less
worried about it (at least in front of the kid).  Strong emotions (good or
bad) are rewards for the kid - don't let them have them.

Fear might help.  Sit her down at the doctors with a large bore IV needle
and a plate of her favorite food.  (Calmly!) explain what the needle is for
and where it will go. Explain that if the needle goes in there will be no
running, no playing, no sleeping in your own bed.  Don't get mad, don't get
emotional - remember that's the reward for the behavior - just set out the
facts.

All of this assumes that it's truly a choice on her part.  There may very
well be a medical problem or compulsion at work... but the timing seems a
little coincidental.

Keep her monitored by doctors to watch the physical side (get a second
opinion or three) but if it's a choice on her part you may be in for a very,
very hard time.
