After the Empire State Building go to the village. West is gay, probably has the most shops. Middle is NYU, lot's of music clubs. Monday night is open mike in many places but you'll still find good music. East is kind of punk and goth. All are lots of fun and have most shops are open late. Times Square is fun to walk through and look at how tacky everything is but try not to spend money there, except on t-shirts and post cards. It's also just a few blocks from GCS so you can pop over easily. Best show on a Monday night is Les Paul at the Irridium. It's expensive but well worth it. If you get dinner you get a better seat and the food is excellent. With dinner and wine it's about $125 pp. He does a meet and greet after every show so bring things for him to sign and a camera. There's also ground zero, China Town and Little Italy.
