Heh, we play all those games! We enjoy the "guts" style games because they generally have higher payouts. But we play them sparingly for the same reason.
The most evil guts game we play is iron cross. Each player gets 4 cards, then you deal 5 cards face up in the middle, in a cross configuration (one card in the middle, one card on each side of that card). One, two, three, drop. The players who remain can play either the vertical three cards or the horizontal three cards (which they declare before anyone exposes their hand). They combine those with the 4 in their hand to make their best 5 card poker hand. We usually make all 7's wild. Everyone who stays plays against each other, one winner, every other loser must match the pot, which then builds, to be matched by the next hands losers, and on it goes. Game ends when only one person stays, and beats the top 4 cards of the deck in combination with the same row the player chose. We've had checkbooks come out on this game.
