Well, you're right.  For example, if unions were to guarantee quality
in, say, homebuilding, then they would still be useful.

There are many unions that are trying to do just that and market it
(esp the carpenter's union).  The problem is, they don't deliver.  And
they don't because they refuse to police themselves, i.e., getting rid
of poorly performing workers.

I'm a great example of someone who would gladly pay a premium for
union workers if I knew that, in hiring them, it would get done right
the first time and exceed my expectations.

I come from a union family, have worked in them, managed them, and
most of my relatives and friends are union workers.  None of them
(save my father-in-law) disagree with me.

So, while unions COULD be useful, they're not.  But I'm open to
examples of union success ....
