Some Jewish explanations:

I've heard one explanation that a "day" back then was not the same as a 
"day" now -- i.e. a day could have been thousands or millions of years.

There's also a medrash that states that G-d built worlds and destroyed them 
before he built this one. I've heard the explanation that these fossils are 
actually remnants of these older, shattered worlds.

And yes, I'm a creationist, but I like the first explanation above.
